This Salt Roasted Whole Chicken cooks up crisp and brown on the outside and juicy and tender on the inside.

3 lb Organic whole chicken 1 Tablespoon plus 1 teaspoon of kosher salt 1 teaspoon plus ½ teaspoon fresh ground pepper Twig of fresh rosemary or other savory herb ¼ cup butter, melted plus 1½ tablespoons butter for the inside of the skin

Set your oven to 425°. Make sure there aren't any gizzards in the cavity, rinse, then pat the inside and out dry with a paper towel. Rub about a teaspoon of kosher salt and black pepper inside the cavity, massage the 1½ tablespoons of butter between the skin. Dust the outside with another tablespoon of kosher salt and a few grinds of pepper. Place your twig of herbs inside the cavity. If you have some kitchen twine, tie the legs together and tuck the wings behind the bird. Roast for 1 hour. Remove from oven and let rest for 10 to 15 minutes before cutting 3.2.2807
