I know I make a lot of pork tenderloins, and I’m always shouting about their tenderness and moistness, but this one is over the top! The addition of bacon and pineapple seems a little “off” but when it’s done, it is truly “on”…

Salty Sweet Pork Tenderloin

INGREDIENTS:

DIRECTIONS:

Preheat the oven to 400 degrees. Coat a large roasting pan wit cooking spray. Season all sides of the pork with salt and pepper. Wrap 6 slices of bacon around each tenderloin and transfer to the prepared pan (secure the bacon with toothpicks if necessary). Arrange the pineapple slices around the pork. Roast for 30 minutes, or until a meat thermometer inserted into the center of the pork reads 160 degrees. Let stand for 5 minutes before slicing in to 1/2 slices.

**I served this with cute little fingerling potatoes.
