This upma made with Samai arisi is not only healthy but it is also delicious and easy to make. Ingredients: Samai – 2 cups Onions – 8 to 10, finely chopped Green Chillies – 4 to 5, slit lengthwise Ginger – 2 tblsp, grated Mustard Seeds – 1/2 tsp Urad Dal – 1/2 tsp Bengal Gram Dal – 1/2 tsp Saunf – 1/2 tsp Oil – 2 tblsp Ghee – 2 tblsp Curry Leaves – few Coriander Leaves – handful, chopped Salt as per tasteOptional: Carrot, Beans, Green Peas – as requiredMethod: 1. Dry roast the samai for 2 to 3 minutes over low/medium flame. 2. Keep aside. 3. Heat oil in a pan over medium flame. 4. Fry the urad dal, mustard seeds, bengal gram dal and saunf for 30 seconds. 5. Add the green chillies, onions, curry leaves and ginger. 6. Saute for 2 to 3 minutes. 7. Pour 6 cups of water and simmer for another 3 minutes. 8. Add the roasted samai and stir well. 9. Cook for a few minutes over medium flame or until the water has almost evaporated. 10. Add ghee and stir. 11. Garnish with coriander leaves. 12. Serve.image via souptstodesserts
