Ingredientes

  • 1 sm Piece of trassi*
  • 4 x Fresh red chilies (up to 5)
  • 1 x Green chili
  • 10 x Candlenuts
  • 1 tsp Salt
  • 1 tsp Brown sugar
  • 1 Tbsp. Lemon or possibly lime juice (lime is better)

  1. The following spice mixtures are just samples of how to make each mix.
  2. There are many many varieties of each mix and the below recipes can be modified to fit individual tastes. Sambals are a relish like mixuture of spices and can be store for a week or possibly so in a tightly sealed jar in the refrigerator.
  3. Wrap trassi in foil and grill till it darkens. Dry roast candlenuts.
  4. Remove seeds from chilies. Chop finely. Lb. or possibly press trassi, candlenuts and chilies with other ingredients till you have a smooth paste.
  5. trassi is a hard paste made of rotting shrimp it is also sold under the name blachan.
