%20nuts%20and%20french%20buttercream.%20Why%20french%20buttercream?%20It's%20because%20it%20is%20the%20way%20to%20use%20up%20the%20eggyolks%20from%20the%20meringue.%20The%20recipe%20is%20very%20simple.%20I%20got%20this%20from%20my%20ever%20favorite%20baking%20book,%20%22Dorothy's%20Cooking%20School%20Cookbook%201%22.%20I%20have%20adapted%20the%20recipe%20and%20procedure.%3C/p%3E%3Cp%3EMeringue%20Layer:%3C/p%3E%3Cp%3ENote:%3C/p%3E%3Cp%3EFor%20the%20ground%20cashew%20nuts,%20I%20used%20a%20food%20processor%20to%20grind%20it.%20You%20can%20use%20a%20blender,%20too.%3C/p%3E%3Cp%3EFor%20the%20garnishing,%20I%20ran%20the%20food%20processor%20for%20a%20few%20seconds%20to%20chop%20the%20nuts.%20Makes%20the%20job%20so%20much%20easier.%3C/p%3E%3Cp%3EI%20halved%20the%20recipe%20for%20the%20meringue%20and%20made%20it%20in%20two%20batches%20because%20my%20oven%20is%20small%20and%20can%20only%20accommodate%20two%20small%20cookie%20sheets.%3C/p%3E%3Cp%3ENote%20that%20the%20colored%20text%20below%20is%20my%20adaptation.%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20300%20deg%20F.%20Line%20the%20underside%20of%203%208x12x2%20pan%20with%20aluminum%20foil.%20Set%20aside%3C/p%3E%3Cp%3E(I%20used%20two%20jelly%20roll%20pans,%20lined%20it%20with%20parchment%20paper%20(not%20waxed%20paper)%20and%20outlined%20it%20using%209x13%20pan%20(that's%20the%20only%20one%20I%20have).%3C/p%3E%3Cp%3EBeat%20the%20eggwhites%20with%20the%20cream%20of%20tartar%20until%20frothy.%20At%20medium%20speed,%20gradually%20add%20the%20sugar.%20Once%20all%20the%20sugar%20is%20added,%20beat%20at%20high%20speed%20until%20stiff%20peaks%20form.%20Fold%20the%20vanilla%20and%20ground%20nuts.%3C/p%3E%3Cp%3EDivide%20the%20mixture%20equally%20among%20the%20baking%20pans%20and%20spread%20it%20evenly.%20I%20used%20the%20outline%20of%20the%20pan%20on%20the%20parchment%20as%20guide.%20Do%20not%20spread%20it%20too%20thick.%20The%20second%20batch%20I%20made%20was%20too%20thick%20and%20went%20soggy%20after%20cooling%20down%20because%20the%20inner%20part%20of%20the%20meringue%20wasn't%20yet%20thoroughly%20baked.%20Do%20not%20spread%20it%20too%20thin%20either.%3C/p%3E%3Cp%3EBake%20for%2045%20minutes%20to%20one%20hour%20or%20until%20meringue%20is%20evenly%20colored.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20completely%20before%20removing%20the%20paper.%3C/p%3E%3Cp%3EPrepare%20your%20frosting:%3C/p%3E%3Cp%3ECombine%20water,%20sugar%20and%20cream%20of%20tartar%20in%20a%20small%20saucepan.%20Let%20it%20boil%20on%20low-med%20heat%20until%20it%20spins%20a%20thread.%20While%20sugar%20is%20boiling,%20beat%20the%20eggyolks%20using%20an%20electric%20mixer%20until%20thick%20and%20lemon%20colored.%20As%20soon%20as%20the%20sugar%20spins%20a%20thread,%20add%20the%20syrup%20in%20thin%20streams%20to%20the%20beaten%20eggyolks.%3C/p%3E%3Cp%3EThe%20easier%20way%20to%20do%20this%20is%20to%20add%20a%20little%20sugar%20to%20the%20eggyolks,%20beat%20a%20little,%20add%20a%20little,%20beat%20a%20little%20until%20all%20the%20sugar%20has%20been%20added.%20It%20prevents%20the%20sugar%20from%20splattering%20around%20your%20bowl.%20I%20got%20this%20tip%20from%20this%20site.%3C/p%3E%3Cp%3EWhen%20all%20the%20sugar%20is%20added,%20beat%20at%20high%20speed%20until%20mixture%20has%20thickened.%20Refrigerate%20to%20cool%20down%20completely.%3C/p%3E%3Cp%3EWhat%20I%20do%20is%20NOT%20refrigerate%20but%20beat%20the%20mixture%20is%20at%20room%20temperature.%20I%20test%20this%20by%20touching%20the%20mixing%20bowl.%20If%20it%20is%20lukewarm%20I%20start%20adding%20the%20butter.%20(If%20using%20a%20heavy%20duty%20mixer,%20switch%20to%20paddle%20attachment%20before%20adding%20the%20butter.%20I%20use%20a%20handheld%20mixer%20all%20throughout%20and%20the%20result%20is%20just%20perfect).%20Make%20sure%20the%20butter%20is%20not%20very%20cold%20but%20not%20melted%20either.%20I%20use%20a%20still%20cold%20but%20soft%20butter.%20Add%20it%20a%20little%20at%20a%20time.%20If%20you%20don't%20let%20the%20mixture%20cool%20down,%20it%20will%20become%20soupy%20when%20you%20add%20the%20butter.%20When%20all%20the%20butter%20has%20been%20added,%20beat%20at%20high%20speed%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20using%20an%20electric%20mixer,%20cream%20the%20butter%20until%20light%20and%20fluffy.%20Gradually%20add%20the%20cold%20eggyolk%20mixture%20to%20the%20butter%20while%20beating%20at%20medium%20speed.Wait%20for%20the%20butter%20to%20absorb%20the%20eggyolk%20mixture%20before%20adding%20the%20next%20spoonful.%3C/p%3E%3Cp%3ETo%20assemble,%20position%20a%20layer%20of%20meringue%20on%20a%20serving%20plate.%20Spread%20buttercream%20and%20sprinkle%20with%20chopped%20cashew%20nuts.%20Continue%20the%20layering%20process.%20Cover%20the%20top%20and%20sides%20and%20garnish%20with%20more%20chopped%20nuts.%20Refrigerate%20or%20freeze%20to%20allow%20the%20buttercream%20to%20firm%20up.%3C/p%3E%3Cp%3EEat%20moderately.%20Take%20note%20that%20you%20are%20like%20eating%2080%25%20sugar
