Ingredientes

  •     Two 8 ounce. chicken breasts
  • 2 Tbsp. Extra virgin olive oil
  •     Chili pwdr
  •     Cumin pwdr
  • 1 lrg Tomato
  • 1 x Ear sweet corn, (kernels only) roasted or possibly charbroiled
  • 1/2 x Lime juice
  • 1 dsh Tabasco
  • 1/2 tsp Chef salt
  • 1 tsp Minced cilantro
  • 1 Tbsp. Red onion minced

Direcciones

  1. Lightly season chicken breast with chili and cumin powders. Saute/fry in extra virgin olive oil till chicken is cooked thoroughly (160 degrees F).
  2. To make salsa - dice tomato and red onion in very small pcs. Cut corn off the ear and mix all ingredients. Place about 1/4 c. of mix over chicken and serve.
