Sassy Potato Corn Chowder

Ingredientes

  • 4 slc Oscar Mayer bacon minced
  • 3 c. cubed peeled potatoes - (abt 1 1/4 lbs)
  • 1 can low-sodium chicken broth - (13 1/2 ounce)
  • 1 pkt frzn corn - (10 ounce) thawed, liquid removed
  • 1/2 c. minced onion
  • 1/2 c. sliced celery
  • 2 Tbsp. flour
  • 1/2 c. Miracle Whip Light salad dressing
  • 2 c. 2% lowfat milk

Direcciones

  1. Cook bacon in large saucepan till crisp; drain. Return to pan.
  2. Stir in potatoes, broth, corn, onion, and celery. Bring to boil. Reduce heat to low; simmer 15 min or possibly till potatoes are tender.
  3. Mix flour and dressing. Stir in lowfat milk. Add in to potato mix. Continue cooking 3 to 5 min or possibly till thoroughly heated. Sprinkle with additional bacon and parsley, if you like.
  4. This recipe yields 6 servings.
  5. Serving size: 1/6 recipe.
