%20a%20reader%20posed%20a%20question%20regarding%20Corningware%20Range%20toppers.%20%20I%20had%20heard%20of%20them,%20but%20I%20had%20never%20seen%20one%20in%20person.%20At%20some%20point%20during%20the%2070's%20or%2080's,%20maybe,%20I%20am%20not%20sure%20which,%20Corningware%20introduced%20a%20line%20of%20Pyroceramic%20cookware%20with%20a%20bonded%20aluminum%20bottom.%20%20Evidently,%20the%20purpose%20was%20to%20distribute%20heat%20more%20evenly.%20%20Now%20I%20suppose%20the%20theory%20is%20sound,%20but%20honestly,%20I%20have%20never%20really%20had%20a%20problem%20with%20hot%20spots%20when%20using%20my%20original%20version%20of%20Corningware.%3C/p%3E%3Cp%3EPyroceramic%20cookware%20acts%20a%20lot%20like%20cast%20iron,%20thus%20it%20absorbs%20heat%20readily%20and,%20though%20it%20may%20take%20just%20a%20bit%20longer%20to%20come%20to%20temperature,%20it%20holds%20that%20heat%20really%20well.%20%20The%20only%20rule%20of%20thumb%20I%20follow%20is%20to%20NEVER%20go%20above%20Medium%20heat.%20%20Copper%20is%20the%20same%20way;%20medium%20is%20the%20highest%20you%20should%20ever%20have%20to%20heat%20the%20pan.%20%20If%20I%20am%20deep%20frying,%20I%20use%20a%20deep%20fryer%20or%20a%20cast%20iron%20pot.%20%20I%20say%20this%20with%20the%20proviso%20that%20on%20my%20old%20gas%20range,%20in%20San%20Diego,%20I%20would%20often%20use%20medium-high%20heat,%20but%20the%20modern%20Cooktop%20I%20have%20now%20is%20capable%20of%20producing%20significantly%20more%20BTUs%20than%20my%20old%20gas%20powered%20dinosaur%20from%20the%2040's.%3C/p%3E%3Cp%3ESo,%20if%20you%20have%20a%20stove%20that%20is%20from%20the%2070's%20or%20later,%20you%20should%20never%20use%20anything%20higher%20than%20medium%20heat%20with%20Corningware.%20%20Even%20that%20has%20a%20proviso...%20If%20you%20are%20boiling%20water,%20medium-high%20heat%20is%20fine.%3C/p%3E%3Cp%3EThat%20being%20said.....%20%20I%20actually%20found%20one%20of%20these%20%22Rangetoppers%22%20a%20couple%20weeks%20ago%20at%20the%20Good%20Will.%3C/p%3E%3Cp%3EIt's%20a%201%201/2%20quart%20sauce%20pan%20(N-1%201/2-B).%3C/p%3E%3Cp%3EI%20am%20just%20getting%20around%20to%20playing%20with%20it...%20(I%20got%20side%20tracked%20cleaning%20my%20Electromatic%20Cornflower%20Percolator%20and%20my%20Stove%20Top%20Black%20Starburst%20Percolator%20that%20I%20have%20not%20posted%20about%20yet)%20%20In%20order%20to%20put%20it%20through%20it's%20paces,%20I%20decided%20to%20make%20sauces.%20%20The%20most%20touchy%20sauces%20I%20could%20think%20of%20(aside%20from%20cheese%20sauce)%3C/p%3E%3Cp%3ETomato%20Sauce%20and%20a%20Bechamel.%20%20Both%20of%20which%20can%20scorch%20fairly%20easily%20if%20the%20heat%20is%20too%20high%20or%20if%20there%20is%20a%20hot%20spot%20in%20a%20pan.%20As%20an%20added%20bonus,%20I%20can%20use%20both%20of%20these%20sauces%20to%20make%20the%20world's%20most%20perfect%20food....%20%20Lasagne!!!!!%3C/p%3E%3Cp%3ENow%20for%20the%20actual%20%22Chicken,%20Cauliflower,%20Fennel%20Lasagne%22%20recipe%20your%20going%20to%20have%20to%20check%20out%20Culinary%20Alchemy,%20but%20here%20is%20how%20I%20make%20Quick%20Tomato%20Sauce%20(when%20I%20don't%20have%207%20hours%20to%20make%20my%20Slow-Cooked%20Tomato%20Sauce)%20and%20onion%20laced%20Bechamel.%3C/p%3E%3Cp%3EHeat%20oil%20in%20the%20in%20your%201%201/2%20quart%20Rangetopper%20(N-1%201/2-B)%20set%20over%20low%20heat.%3C/p%3E%3Cp%3EOnce%20oil%20it%20hot,%20add%20the%20Onion,%20Garlic%20and%20Carrot,%20then%20sweat%20for%2030%20minutes%20(yep,%20low%20and%20slow.%20%20I%20guess%20my%20%22quick%22%20tomato%20sauce%20isn't%20as%20quick%20as%20I%20thought)%3C/p%3E%3Cp%3EAdd%20the%20crushed%20tomatoes%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3ERaise%20the%20heat%20to%20medium....%20and%20cook,%20stirring%20constantly,%20just%20until%20it%20comes%20to%20a%20simmer....%3C/p%3E%3Cp%3EReduce%20heat%20to%20low%20again%20and%20simmer%20for%2015%20minutes%20longer.%3C/p%3E%3Cp%3ERemove%20from%20the%20flame%20and%20stir%20in%20the%20Basil.%3C/p%3E%3Cp%3ESeason%20with%20Salt%20and%20Pepper,%20then%20pour%20into%20a%20bowl%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3ESo%20here%20is%20the%20pot,%20after%20cooking%20the%20tomato%20sauce...%3C/p%3E%3Cp%3ENo%20scorching%20and%20easy%20cleanup;%20but%20my%20regular%20Corningware%20does%20that%20too%20so%20I%20am%20still%20unconvinced.%3C/p%3E%3Cp%3ENow%20for%20the%20Bechamel.........%3C/p%3E%3Cp%3EOnion%20Bechamel%3C/p%3E%3Cp%3E4%20TB%20Unsalted%20Butter%3C/p%3E%3Cp%3E3%20TB%20finely%20minced%20Onion%3C/p%3E%3Cp%3E2%20cloves%20Garlic,%20minced%3C/p%3E%3Cp%3E3%20TB%20AP%20Flour%3C/p%3E%3Cp%3E3%20cups%20Whole%20Milk%3C/p%3E%3Cp%3E1/4%20tsp%20Nutmeg,%20grated%3C/p%3E%3Cp%3ESalt%20&%20Pepper%20to%20Taste%3C/p%3E%3Cp%3EMelt%20butter%20in%20your%201%201/2%20quart%20Rangetopper%20(N-1%201/2-B)%20set%20over%20medium%20heat.%3C/p%3E%3Cp%3EWhen%20the%20foam%20subsides,%20add%20the%20Onion%20and%20the%20Garlic,%20then%20saute%20for%204%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20Flour%20and%20whisk%20until%20well%20combined...%3C/p%3E%3Cp%3EContinue%20cooking%20for%202%20minutes%20to%20remove%20the%20raw%20flavor%20from%20the%20Flour.%3C/p%3E%3Cp%3EWhisk%20in%20the%20Milk,%20and%20bring%20to%20a%20simmer%20over%20low%20heat.%3C/p%3E%3Cp%3EAdd%20Nutmeg%20and%20simmer%20for%2010%20minutes,%20until%20the%20sauce%20thickens.%3C/p%3E%3Cp%3ERemove%20pan%20from%20the%20flame%20and%20season%20with%20Salt%20and%20Pepper.%3C/p%3E%3Cp%3EIn%20this%20case,%20divide%20the%20hot%20Bechamel%20by%20placing%201%20cup%20in%20a%20small%20bowl%20and%20the%20remaining%20sauce%20in%20another%20bowl,%20then%20cover%20both%20with%20plastic%20wrap%20on%20the%20surface%20to%20prevent%20crusting.%3C/p%3E%3Cp%3EAnd%20look%20at%20our%20pan.....%20%20No%20scorching%20with%20the%20milk%20sauce%20either.%3C/p%3E%3Cp%3EConclusion:%20%20I%20really%20am%20not%20convinced%20that%20the%20applied%20aluminum%20bottom%20really%20makes%20that%20big%20of%20a%20difference.%20%20Maybe%20if%20I%20tried%20to%20cook%20on%20high%20heat,%20it%20might.%20%20But%20I%20would%20not%20make%20tomato%20sauce%20or%20bechamel%20on%20high%20heat,%20even%20in%20one%20of%20my%20copper%20pots.%20%20As%20a%20result%20of%20the%20metal%20bottom,%20these%20pans%20CANNOT%20be%20used%20in%20the%20microwave,%20which%20reduces%20their%20multipurpose%20capability.%20%20In%20essence,%20defeating%20the%20whole%20idea%20of%20having%20Corningware.%20%20The%20bonded%20Aluminum%20is%20non-magnetic,%20so%20they%20cannot%20%20be%20used%20on%20Induction%20Cooktops%20either...%20%20Then%20again,%20this%20is%20true%20of%20regular%20Corningware%20pans%20as%20well.%3C/p%3E%3Cp%3EIt%20makes%20a%20great%20display%20piece%20though.%3C/p%3E%3Cp%3EWhere%20is%20your%20Corningware??%3C/p%3E){kind=link}
