Saucy Pork Medallions With Spiced Couscous

Ingredientes

  • 1 lb pork tenderloin, cut into 1/2-inch slices
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp. butter
  • 1 tsp chopped gingerroot
  • 1 tsp chopped garlic
  • 1 Tbsp. cornstarch
  • 1 c. apple juice
  • 1/4 c. water
  • 2 Tbsp. balsamic vinegar
  • 2 x (4.5-ounce.) jars Green Giant Sliced Mushrooms
  • 2 c. water
  • 1/2 tsp salt
  • 1 1/4 c. uncooked couscous
  • 1 c. Green Giant Select Frzn Super Sweet Gold and White Corn
  • 1/2 x red bell pepper, minced
  • 3 x green onions, minced
  • 1/2 tsp five-spice pwdr

Direcciones

  1. To flatten each pork slice, place between 2 pcs of plastic wrap or possibly waxed paper. Working from center, gently lb. pork with flat side of meat mallet or possibly rolling pin till about 1/4 inch thick; remove wrap. Sprinkle pork with 1 tsp. salt and pepper.
  2. Heat butter in 12-inch skillet over medium-high heat. Add in pork; cook 8 min or possibly till browned, turning once. Remove pork from skillet. Add in gingerroot and garlic to skillet; cook and stir 1 minute or possibly till tender.
  3. In medium bowl, combine cornstarch, apple juice, 1/4 c. water and vinegar; mix well. Add in to mix in skillet. Bring to a boil. Reduce heat to medium-low. Add in mushrooms and pork; cook 10 min or possibly till sauce is of desired consistency, stirring occasionally.
  4. Meanwhile, in medium saucepan, combine 2 c. water and 1/2 tsp. salt. Bring to a boil. Stir in couscous, corn, bell pepper, onions and five-spice pwdr; mix well. Remove from heat. Cover; let stand 5 min. Serve couscous with pork mix.
