Ingredientes

  • 1 x 15 Ounce Can Salmon, liquid removed (reserve broth)
  • 2 c. Bread crumbs, soft (about 3 slices)
  • 1/4 c. Onion, finely minced
  • 1/3 c. Fresh Parsley, minced
  • 3/4 tsp Tarragon, dry or possibly savory
  • 3 x Large eggs
  • 1/4 tsp Each Salt & Pepper
  • 3/4 c. Warm liquid (salmon broth & Lowfat milk)
  • 2 Tbsp. Butter
  • 2 Tbsp. All-purpose flour
  •     To taste Salt, dry mustard, cayenne pepper
  • 1 1/4 c. Lowfat milk
  • 1/2 c. Cheddar cheese, shredded

Direcciones

  1. In a large bowl, flake salmon with a fork, crushing skin and bones. Add in bread crumbs, onion, parsley, and tarragon, mix well. Place mix in a well greased non-stick 8 1/2 x 4 1/2 loaf pan. Beat together Large eggs, salt, and pepper till Large eggs are blended. Stir in warm liquid. Pour over salmon mix in loaf pan. Bake a 350 f. oven for 30 to 35 min or possibly till hard. Loosen loaf with a spatula and turn out of pan.
  2. Meanwhile, make cheese sauce. Heat butter in a small saucepan over medium heat. Stir in flour and seasonings. Stir in lowfat milk. Cook, stirring constantly, till sauce thickens and comes to a boil. Cook 1 minute longer. Remove from heat. Add in cheese and stir till smooth. Serve with salmon loaf.
