Receta SAUSAGE AND PEPPERONI PIZZA MUFFINS
These Sausage and Pepperoni Pizza Muffins will definitely become a favorite with your family and guests. Serve them as an appetizer with salsa, take them for lunch to work, have one for a snack anytime. They freeze great, can be reheated and children as well as adults will love them. They are wonderful to just grab one on the go or for an after school snack, too. It’s a pizza in a muffin!
- 1/2 pound pork sausage
- 1/3 cup chopped green onion
- 1/4 cup chopped green pepper
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 tablespoon white granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon oregano or Italian seasoning
- 1/4 cup butter or margarine or 4 tablespoons, softened
- 2 eggs
- 1 cup milk
- 1/3 cup chunky salsa (could use pizza sauce or tomato sauce)
- 1 cup shredded mozzarella cheese
- 1 cup mini pepperoni slices (Could use the large slices and cut in 4 pieces)
Brown the pork sausage, green onion and green pepper in a skillet on top of the stove. Drain and set aside. In a large mixing bowl whisk together the flour, baking powder, sugar, salt and oregano. Cut the butter into the flour mixture until resembles coarse crumbs. Add the eggs, milk and salsa. Mix well with a spoon. Add the sausage, green pepper and onions. Fold in the cheese and pepperoni slices. Spray a 12 cup muffin pan with cooking spray. Fill each cup about half full. Bake in preheated 375 degree oven for 30 to 35 minutes until golden brown checking for doneness as ovens vary. Makes about 18 muffins. Enjoy! P.S.
