Receta Sausage and Spinach Pasta
This meal just looks like the holidays! And it tastes oh so good!
- 10 ounces frozen spinach-thawed, rinsed and drained
- 1 pound Italian sausage
- 1 pound of your favorite pasta-we used penne
- 1/2 cup onion-chopped
- 2 cans diced tomatoes
- 1 small can tomato sauce
- 1 garlic clove-minced
- 1 teaspoon basil
- 1 teaspoon dried oregano
- 1/2 cup heavy cream
- 8 ounces of mozzarella-shredded
- 1/2 cup Parmesan cheese-shredded
Start by sauteing the onion and garlic. Once the onion is soft, add tomatoes and tomato sauce, basil and oregano. Let simmer for about 10 minutes. Then add heavy cream, and let that simmer for about 10 minutes. Then add spinach and 1/2 of the shredded mozzarella cheese.
In another pan fry up the sausage.
In a large pot cook your pasta as directed on the box...however remove when still al dente. The pasta still should have a little crunch to it, because it will finish cooking in the oven. Drain and mix all pasta with the sauce mixture and the sausage. Pour into a 9x13 pan and top with the rest of the mozzarella cheese and the Parmesan cheese. Bake at 350 for 15-20 minutes.
