What’s better for dinner than breakfast?! This is really just a method, so feel free to substitute. I love hash, but the stuff in the can is SO full of sodium, so I whipped this up the other day to get my fix, but not bloat my ankles!
Sausage Hash
INGREDIENTS:
4-6 precooked brats (we like Johnsonville) sliced and quartered
1 package refrigerated shredded hashbrowns
- 1 cup onion-diced
- 1 cup corn
- 1 medium yellow pepper-diced
- 1 cup shredded cheese, divided
- 1 teaspoon paprika
DIRECTIONS:
In a large skillet, cook the bratwurst and onion over medium heat until the brats are browned and the onions are translucent. Stir in the potatoes, corn and yellow pepper. Cook, uncovered over medium heat for 12-15 minutes or until the hashbrowns are browned to your liking. Stir in half of the cheese and the paprika. Plate and top with remaining cheese and a fried egg.
