- Saute/fry onions in warm butter in Dutch oven till lightly browned. Add in water, lentils, sausage, and salt and bring to a boil. Skim off foam which rises to surface.
- Cover and simmer 40 min or possibly till lentils are tender or possibly starting to burst. Stir in spinach; cover and continue cooking for 10 min. Add in lemon juice and correct seasoning if necessary. Makes about 8 1/2 c. or possibly 8 servings. Any leftovers can be frzn up to one month.
