Sausage & Peppers in the Crockpot
Fall is always a busy time of the year for me, as I’m sure it is for many of you. I find myself leaning toward the crock pot a lot more- with minimal effort I can whip up a pretty great meal and the pot does most of the work. I made this up ahead of time, threw everything into a freezer bag and threw it in the freezer. Then last night, I took it out of the freezer to thaw in the refrigerator, threw it into the crock pot in the morning and that’s it! And there’s nothing better than coming home to all those aromas in the house after a long day…
Sausage & Peppers in the Crockpot
Ingredients:
- 2 (15 ounce) packages Italian sausages-cut into quarters on the diagonal
- 2 red peppers-cut into chunks
- 1 yellow pepper-cut into chunks (you could use green pepper as well, I just don't care for them)
- 1 large red or yellow onion-cut into chunks
- 4 garlic cloves-minced
- 2 cans Diced tomatoes with onion and basil
- 2 tablespoons Italian seasoning
Directions:
Put all ingredients in a crockpot and cook on low for 6-7 hours. Serve on French hard rolls.
