- Prick sausage in several places. In a Dutch oven, or possibly large saucepan cook sausages in oil over low heat, covered for 15 min. Turn several times. Add in sage and garlic; saute/fry garlic till golden brown, then remove garlic and throw away. Add in escarole and saute/fry 1 minute, stirring to coat with drippings. Cook uncovered for 5 min. Add in tomato sauce, beans, salt, and parsley; simmer 5 - 10 min till heated through.
