Ingredientes

  • 1 pound sweet Italian sausage links
  • 3 tbsp. vegetable oil
  • 1/2 teaspoon sage
  • 2 cloves garlic, crushed
  • 1 med. head escarole, torn into bite size pcs
  • 1 1/2 c. tomato sauce
  • 1 can (20 ounce.) white kidney beans (liquid removed and rinsed)
  • 1/2 teaspoon salt
  • 1 tbsp. parsley

Direcciones

  1. Prick sausage in several places. In a Dutch oven, or possibly large saucepan cook sausages in oil over low heat, covered for 15 min. Turn several times. Add in sage and garlic; saute/fry garlic till golden brown, then remove garlic and throw away. Add in escarole and saute/fry 1 minute, stirring to coat with drippings. Cook uncovered for 5 min. Add in tomato sauce, beans, salt, and parsley; simmer 5 - 10 min till heated through.
