Ingredientes

  • 1 can (19-oz) chick-peas, rinsed and liquid removed (about 2 c.)
  • 2 Tbsp. Plus 2 tsp. extra virgin olive oil, (preferable extra-virgin)
  • 2 x Cinnamon sticks, halved
  • 2 tsp Fresh lemon juice, or possibly to taste
  • 1/4 c. Fresh coriander

Direcciones

  1. Dry chick-peas completely between layers of paper towels.
  2. In a deep 12-inch heavy skillet (preferably non-stick) heat 3 Tbsp. oil with cinnamon sticks over moderately high heat till cinnamon is fragrant and saute/fry chick-peas, shaking skillet, till browned and crisp, about 10 min. Transfer chick-peas to a bowl and toss with remaining 2 tsp. oil, lemon juice, coriander, and salt and pepper to taste. Serve chick-peas hot or possibly at room temperature.
  3. Serves 2.
