Ingredientes

  • 2 geoduck, about 1 pound each
  • 3 Large eggs
  • Vegetable oil, preferably peanut
  • 4 tbsp. unsalted butter, clarified
  • Flour
  • Salt and pepper
  • Garlic butter
  • White wine
  • Lemon

Direcciones

  1. Clean geoduck, slice steaks from neck and breast and lb. neck steaks to tenderize. Whip Large eggs with 3 Tbsp. vegetable oil to make batter. Salt and pepper batter to taste.
  2. In heavy skillet, heat equal amounts of clarified butter and vegetable oil till quite warm but not smoking.
  3. Salt and pepper geoduck steaks to taste. Dredge in flour on both sides. Shake off excess flour, then dip steaks in batter and saute/fry briefly on both sides till brown. Set steaks aside on warm platter.
  4. Clean skillet and return to heat. Add in 4 to 5 Tbsp. garlic butter and heat till foaming. Remove from heat and stir in 4 to 5 tsp. white wine and a couple squeezes of lemon juice. Pour sauce over geoduck steaks and serve immediately. Serves 4-6.
