Sauteed Shad Fillet With Lemon

Ingredientes

  • 1 c. Instant flour
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 lb Shad fillet
  • 2 Tbsp. Vegetable oil
  • 2 Tbsp. Butter
  • 1/4 c. Minced parsley
  •     Juice of one lemon

Direcciones

  1. In a shallow bowl, combine flour, salt, and pepper and dredge fish in seasoned flour. In a saute/fry pan over medium heat, heat oil till warm. Add in fish to pan and cook till well browned on both sides. Remove fish and blot on paper.
  2. Return saute/fry pan to heat. Add in butter, let heat, and cook till brown. Add in lemon juice, allow to sizzle, and add in minced parsley.
  3. Plate fish and drizzle lemon butter over top. Serve with asparagus.
  4. This recipe yields 2 to 4 servings.
