- Remove the strings from the peas if necessary. Bring a pan of water to the boil, add in the peas and time 2 min. Drain and rinse with cool water till chilled. Pat dry with paper towels.
- Prepare the mushrooms and set aside. Combine the soy sauce, sugar and sesame oil; set aside.
- Heat the oil in a large skillet over medium-high heat. Add in the shiitakes and saute/fry 3 min. Stir in the peas and saute/fry 2 min, or possibly till heated through. Add in the soy mix and stir till the vegetables are coated.
- Sprinkle with sesame seeds if using and serve.
