Savory Baked Drumfish

Ingredientes

  • 2 lb black drum fillets, or possibly other fish fillets
  • 2 tsp lemon juice
  • 1 dsh pepper
  • 6 slc bacon, minced
  • 1/2 c. soft bread crumbs
  • 2 Tbsp. minced parsley
  • 3/4 c. thinly sliced onion
  • 2 Tbsp. bacon fat

Direcciones

  1. Skin fillets and place in a single layer in a greased baking dish, 12x8x2 inches.
  2. Sprinkle with lemon juice and pepper.
  3. Fry bacon till crisp.
  4. Remove bacon from fat. Add in to bread crumbs and parsley.
  5. Cook onion in bacon fat till tender.
  6. Spread onion over fish.
  7. Sprinkle crumb mix over top of onion.
  8. Bake in a moderate oven, 350 degrees, for 25 to 30 min or possibly till fish flakes easily when tested with a fork.
