Ingredientes

  • 3 lb caribou pot roast
  • 1/4 c. fat
  • 2 med onions sliced
  • 1 c. tomato paste
  •     (or possibly tomato meat sauce)
  • 1 c. water
  • 1/4 tsp freshly-grnd black pepper
  • 1/4 tsp ginger
  • 1 Tbsp. salt
  • 8 whl cloves
  • 6 x potatoes halved
  • 6 x carrots halved

Direcciones

  1. Brown meat well in fat in heavy kettle or possibly roasting pan.
  2. Slip a low rack under meat. Add in onions, tomato paste, water, and seasonings. Cover tightly. Simmer over low heat or possibly bake in moderate oven (350 degrees ) for 3 hrs or possibly till tender.
  3. Add in potatoes and carrots. Cook 30 min longer. Place on deep platter.
  4. This recipe yields 6 servings.
