%3C/p%3E%3Cp%3EBut%20I%20kinda%20miss%20food%20magazines.%20So%20I%20usually%20buy%20one%20or%20two%20when%20I%20fly%20somewhere.%20The%20inspiration%20for%20this%20morning's%20experiment%20in%20decadent%20deliciousness%20came%20from%20the%20the%20March%20issue%20of%20Bon%20Appetit%20that%20I%20bought%20when%20we%20went%20to%20Austin%20this%20spring.%20Here%20it%20is%20(forgive%20the%20water%20marks%20on%20the%20page%20-%20I%20was%20cooking%20and%20in%20a%20bit%20of%20a%20hurry.)%3C/p%3E%3Cp%3ESavory%20waffles%20-%20what%20an%20amazingly%20good,%20simple%20idea!%20And%20one%20that%20had%20never%20occurred%20to%20me%20before,%20even%20though%20we%20make%20waffles%20fairly%20regularly%20and%20often%20add%20raspberries,%20peaches%20or%20blueberries%20to%20them.%20Duh!%3C/p%3E%3Cp%3EAfter%20reading%20the%20actual%20recipe,%20I%20decided%20to%20leave%20it%20at%20%22inspiration%22%20as%20it%20seemed%20a%20little%20more%20complicated%20than%20necessary%20-%20we%20just%20went%20with%20the%20basic%20waffle%20recipe%20that%20we%20always%20use%20from%20the%20Joy%20of%20Cooking.%20My%20main%20contribution%20to%20this%20recipe%20is%20the%20fresh%20rosemary%20but%20I%20think%20it%20actually%20makes%20a%20BIG%20difference.%3C/p%3E%3Cp%3EI've%20had%20a%20thing%20for%20rosemary%20with%20ham%20ever%20since%20our%20butcher%20back%20in%20Berkeley%20encouraged%20us%20to%20try%20some%20Fra'%20mani%20rosemary%20ham%20that%20we%20fell%20for%20instantly.%20Our%20little%20butcher%20shop%20here%20in%20Woodstock%20does%20not%20carry%20Fra'%20mani%20which%20is%20not%20surprising%20since%20it's%20one%20of%20these%20Berkeley-based%20hand-crafted%20deals%20that%20was%20started%20by%20someone%20who%20used%20to%20work%20at%20Chez%20Panisse%20(there%20are%20a%20surprising%20number%20of%20these%20in%20the%20Bay%20area!)%20but%20their%20site%20says%20that%20Fleishers%20carries%20some%20of%20their%20stuff%20and%20I%20spotted%20some%20at%20a%20Fairway%20at%20one%20point,%20too,%20lest%20you%20want%20to%20try%20to%20seek%20it%20out.%3C/p%3E%3Cp%3EBut%20enough%20about%20them,%20back%20to%20these%20waffles!%20They%20were%20easy%20to%20make%20-%20I%20just%20grated%20some%20sharp%20cheddar,%20chopped%20up%20a%20sprig%20of%20fresh%20rosemary,%20and%20cut%20a%20couple%20slices%20of%20Applegate%20Farms%20ham%20which%20is%20at%20least%20hormone-%20and%20antibiotic-free.%3C/p%3E%3Cp%3EThen%20I%20added%20it%20all,%20along%20with%20a%20few%20grinds%20of%20black%20pepper,%20to%20the%20waffle%20batter%20my%20husband%20had%20whipped%20up.%3C/p%3E%3Cp%3EI'd%20been%20a%20little%20concerned%20that%20the%20cheese%20might%20stick%20to%20the%20waffle%20iron%20but%20my%20husband,%20who%20is%20the%20waffle%20master%20in%20our%20family,%20reported%20smooth%20sailing.%20Served%20with%20real%20maple%20syrup,%20these%20things%20make%20your%20mouth%20happy;%20your%20heart%20is%20probably%20another%20story%20since%20these%20officially%20fall%20into%20the%20category%20of%20%22fat%20bomb%22%20but%20I%20feel%20that%20one%20must%20live%20a%20little%20sometimes...%3C/p%3E%3Cp%3EWe%20ate%20them%20al%20fresco%20on%20the%20gorgeous%20live-edged%20cedar%20picnic%20table%20my%20husband%20built%20for%20us%20a%20few%20weeks%20ago.%20The%20combination%20of%20the%20crispy%20waffle,%20the%20smoky%20ham,%20the%20sharp,%20gooey%20cheese,%20the%20fresh,%20almost%20piney%20taste%20of%20the%20rosemary%20and%20the%20sweetness%20of%20the%20maple%20syrup%20is%20just%20really%20good!%3C/p%3E%3Cp%3EAnd%20we%20made%20a%20few%20extra%20to%20freeze%20for%20some%20happy%20future%20morning.%3C/p%3E%3Cp%3ESavory%20Ham,%20Cheddar%20and%20Rosemary%20Waffles%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Mix%20the%20flour,%20baking%20powder,%20sugar%20and%20salt.%20Mix%20the%20eggs,%20butter%20and%20milk.%3C/p%3E%3Cp%3E2.%20Pour%20the%20wet%20ingredients%20into%20the%20dry%20ingredients.%20Add%20the%20cheese,%20ham,%20rosemary%20and%20black%20pepper%20and%20stir%20to%20combine.%20Be%20careful%20not%20to%20overmix.%3C/p%3E%3Cp%3E3.%20Cook%20in%20a%20greased%20waffle%20iron%20and%20serve%20hot%20with%20pure%20maple%20syrup%20(you%20could%20put%20butter%20on%20these%20if%20you%20like,%20it%20just%20seems%20like%20overkill%20to%20me.)%3C/p%3E%3Cp%3EDon't%20forget%20that%20you%20can%20freeze%20any%20leftovers%20(or%20make%20extra%20to%20freeze)!%20Just%20let%20them%20cool%20on%20a%20wire%20rack,%20then%20put%20the%20rack%20in%20the%20freezer%20for%2020%20minutes%20to%20freeze%20them%20all%20individually,%20then%20remove%20the%20tray%20and%20stack%20the%20waffles%20neatly%20in%20a%20large%20freezer%20bag,%20remove%20the%20air%20before%20sealing%20(closing%20the%20bag%20almost%20all%20the%20way%20and%20using%20a%20straw%20to%20suck%20out%20the%20air%20works%20wonders%20for%20this)%20and%20freeze.%20Eat%20them%20within%20a%20month%20or%20two%20-%20just%20reheat%20them%20in%20a%20toaster%20oven%20for%20a%20few%20minutes%20-%20they'll%20taste%20great.%3C/p%3E){kind=link}
