I can also see this healthy rice mixture at home as a stuffing for bell peppers.
And of course it's hard not to like a dish that only requires a single skillet to be cleaned afterwards!
How to Make Savory Pork and Vegetable Rice
This single skillet recipe is a variation of the Spicy Sausage Rice from Gordon Ramsay's Home Cooking cookbook. I've been working my way through his recipes since I received his latest cookbook for my birthday in August. So far they've been excellent.
I usually follow a new recipe as written but for this one I had to diverge from the original because it calls for sausages. They tend to make my wife's stomach do unpleasant things so they've been banished from our family meals.
And that's OK considering the ground meat used in sausages typically has more fat than the lean ground pork I used as a substitute.
To make the pork taste similar to an Italian sausage, I flavored it with crushed fennel seed, dried oregano, garlic and red pepper flakes.
White wine adds another dimension to this dish. I was a more generous with it than the recipe requires!
Diced red bell pepper provides added color and chopped flat leaf parsley along with sliced cherry tomatoes deliver a fresh garden flavor that partners well with the white wine.
I made this versatile dish as a weeknight meal and surrounded it with steamed broccoli. With mellow jazz influenced tunes playing in the background the cooking experience felt gourmet.
Thankfully the clean-up afterwards didn't.
