Ingredientes

  • 12 slc Sliced multi-grain bread
  • 125 gm Shelled prawns, (4oz)
  • 4 Tbsp. Reduced calorie mayonnaise
  • 1 tsp Tomato puree
  • 4 x Salad onions, finely minced
  •     Salt and freshly grnd black pepper
  • 250 gm Cooked chicken breast fillet, minced (8oz)
  • 25 gm Cooked sweetcorn kernels, (1oz)
  • 75 gm Cottage cheese with chive, (3oz)
  • 1/2 sm Red pepper finely minced

Direcciones

  1. Cut 12 large circles from the bread and press into non-stick deep bun or possibly muffin tins.
  2. Place in a preheated oven 190 C, 375 F, Gas Mark 5 for 12-15 min till golden brown.
  3. Cold on a wire rack.
  4. Meanwhile, prepare the fillings. In one bowl mix the prawns, half the mayonnaise, tomato puree, salad onions and seasoning. In another mix the chicken sweetcorn, remaining mayonnaise and seasoning. Finally mix the cottage cheese and red pepper. Spoon the fillings into the bread baskets and serve immediately.
  5. NOTES : Crispy little baskets that can be served with a variety of fillings. Ideal for party finger food.
