%20and%20are%20MADE%20for%20sandwiches.%20They%20are%20also%20delicious%20with%20cream%20cheese%20and%20a%20fresh%20cup%20of%20coffee%20in%20the%20morning.%3C/p%3E%3Cp%3EI%20really%20wanted%20to%20reproduce%20that%20chewy%20crust%20that%20is%20easily%20achieved%20in%20commercial%20ovens%20because%20steam%20gets%20trapped,%20which%20is%20responsible%20for%20that%20wonderful%20%E2%80%9Cchew%E2%80%9D%20we%20all%20love%20so%20much.%20Unfortunately%20my%20oven%20is%20smaller%20than%20small%E2%80%A6think%202/3%20of%20a%20standard%20North%20American%20oven%E2%80%A6but%20there%20is%20something%20you%20can%20still%20do%20if%20you%20are%20in%20the%20same%20situation.%20Place%20a%20rimmed%20baking%20sheet%20filled%201/3%20with%20water%20on%20a%20lower%20rack%20of%20your%20oven.%20The%20water%20will%20produce%20steam%20while%20buns%20are%20baking,%20which%20will%20result%20in%20deliciously%20chewy%20crust.%3C/p%3E%3Cp%3EThe%20dough%20for%20Bialy%20is%20so%20easy%20to%20make%20and%20produces%20very%20airy%20buns%20with%20slightly%20chewy%20crust.%20Pure%20beauty!%20We%20destroyed%20about%20half%20the%20batch%20as%20soon%20as%20they%20got%20out%20of%20the%20oven%20but%20luckily%20the%20recipe%20makes%20about%2018%20so%20we%20had%20plenty%20for%20the%20rest%20of%20the%20week.%20As%20I%20mentioned%20Brad%20made%20sandwiches%20to%20take%20to%20work%20and%20even%20on%20day%204%20they%20were%20absolutely%20delightful!%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20salt%20and%20yeast%20together%20in%20a%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20a%20dough%20hook%20attachment%20and%20mix%20for%20a%20few%20seconds.%20Add%20the%20water%20and%20mix%20until%20it%20forms%20an%20elastic%20dough%20for%20about%205%20minutes.%20By%20the%20end%20of%20it%20the%20dough%20should%20come%20away%20from%20the%20walls%20of%20your%20mixing%20bowl.%20Cover%20with%20a%20plastic%20wrap%20and%20let%20it%20rise%20in%20a%20warm%20place%20for%202%20hours.%20it%20should%20double%20in%20size.%20Turn%20your%20dough%20out%20on%20a%20floured%20surface%20and%20form%20it%20into%20a%20ball.%20With%20a%20sharp%20knife%20portion%20your%20dough%20into%20golf%20ball-sized%20pieces.%20Cover%20and%20let%20rest%20for%201%20hour.%20Meanwhile%20make%20the%20filling.%20Heat%20the%20oil%20in%20a%20large%20pan%20and%20cook%20the%20onion%20over%20low%20heat%20for%207-10%20minutes.%20Add%20poppy%20seeds%20and%20mix.%20Take%20off%20the%20heat.%20Preheat%20the%20oven%20to%20500%20F/260C.%20Put%20a%20dough%20ball%20on%20your%20floured%20surface%20and%20make%20an%20indent%20in%20the%20middle%20with%20your%20thumb,%20then%20gently%20pull%20the%20opposite%20sides%20of%20ball%20to%20stretch.%20The%20indentation%20should%20be%20very%20thin%20but%20make%20sure%20not%20to%20tear.%20Fill%20the%20middle%20of%20each%20bun%20with%20%C2%BD%20tsp%20of%20the%20onion%20filling.%20Transfer%20bialys%20on%20parchment%20lined%20baking%20sheets%20and%20sprinkle%20with%20more%20poppy%20seeds.%20Fill%20%E2%85%93%20of%20a%20rimmed%20baking%20sheet%20with%20water%20and%20place%20in%20the%20lower%20rack%20of%20your%20oven.%20Place%20the%20baking%20sheet%20with%20bialys%20on%20a%20rack%20positioned%20in%20the%20middle%20of%20the%20oven.%20Bake%20for%208-12%20minutes%20and%20cool%20on%20a%20wire%20rack.%20Repeat%20until%20all%20bialys%20are%20baked.%20%203.2.2802%3C/p%3E){kind=link}
