Ingredientes

  • 1 pound scallops
  • 1/2 c. onions, minced
  • 1/2 c. green peppers
  • 1 clove garlic, chopped
  • 2 T veg. oil
  • 1 (16 ounce) can tomato, cut up
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1/4 teaspoon basil
  • 2 bay leaves
  • 2 T cornstarch

Direcciones

  1. Cut scallops into 3/4 inch pcs. Cook onion, green pepper and garlic in oil till tender. Add in tomato, tomato sauce, sugar and seasonings. Cover and simmer 15 min. Add in scallops, simmer 5 min. Remove bay leaves. Blend cornstarch and 1/4 cup water. Add in to scallops. Cook and stir till thickened. Serve over rice or possibly thin spaghetti.
