Receta Scallop Creole

- Cut scallops into 3/4 inch pcs. Cook onion, green pepper and garlic in oil till tender. Add in tomato, tomato sauce, sugar and seasonings. Cover and simmer 15 min. Add in scallops, simmer 5 min. Remove bay leaves. Blend cornstarch and 1/4 cup water. Add in to scallops. Cook and stir till thickened. Serve over rice or possibly thin spaghetti.
