Ingredientes

  • 2 lb small scallops or possibly prawns
  • 2 med onions, minced
  • 1/2 c. celery, minced
  • 3 Tbsp. flour
  • 2 x cloves garlic, chopped
  • 2 lb fresh okra, sliced 1/4in
  • 2 x green peppers, minced
  • 4 Tbsp. extra virgin olive oil
  • 3 x tomatoes, cut up
  •     salt & pepper to taste
  • 1 tsp cumin
  •     Tobasco to taste

Direcciones

  1. Prepare a rue in Dutch oven with extra virgin olive oil and flour. Cook till brown, stirring often. Add in onion, green pepper, and garlic. Slowly stir in 1 qt of water. Add in salt, pepper, cumin, and Tobasco. Add in cut up tomatoes, okra, and celery. Cover and cook about 30 min. Add in scallops and simmer another 6 min.
