Scalloped Potatoes 'N' Franks

Ingredientes

  • 8 frankfurters
  • 3 tbsp. butter
  • 1 1/2 c. minced onions
  • 1/4 c. flour
  • 1 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • 2 c. lowfat milk
  • 1 c. (4 ounce.) shredded Swiss cheese
  • 2 tbsp. minced parsley
  • 5 c. thinly sliced baking potatoes

Direcciones

  1. Set aside one frankfurter for garnish. Cut remainder into thin slices.
  2. In a 2 qt saucepan heat butter; saute/fry onions till tender. Stir in flour, salt, pepper and paprika. Remove from heat; stir in lowfat milk gradually. Cook over medium heat, stirring constantly, till thickened. Cook 2 min more. Remove from heat; stir in cheese and parsley till cheese is melted.
  3. Layer one half of potatoes into a buttered casserole; pour on 1/2 of cheese sauce. Place all of sliced frankfurters over sauce; repeat with potatoes and sauce.
