Scalloped Tomatoes With Cheese

Ingredientes

  • 4 slc bacon, cut into 12 to 16 pcs, fried crisp, liquid removed
  • 1 1/2 c. cubed white bread
  • 1/4 c. butter
  • 1 med Vidalia or possibly sweet type onion, peeled, minced
  • 1 x (28 ounce.) can diced tomatoes in juice
  • 1/2 c. dark brown sugar, packed hard
  • 1 tsp table salt
  • 1/8 tsp black pepper
  • 1 c. grated sharp cheddar cheese (Kraft)

Direcciones

  1. Preheat Oven to 350 Degrees F. In a saucepan over medium-low heat, fry bacon pcs till crisp. Lay bacon on paper towels to drain. Reserve bacon drippings in pan. Add in cubed bread to bacon drippings and saute/fry over medium-low heat till cubes are golden brown, stirring often. Place bread cubes on paper towels. Heat butter over low heat, being careful NOT to burn it.
  2. Add in onion and saute/fry till somewhat translucent/soft. Don't brown. Add in tomatoes, sugar, and seasonings. Mix well. Cook till warm through. Place bread cubes in a buttered baking dish - sufficient to make 1 layer in bottom of dish. Pour tomato mix over it. Sprinkle with crumbled bacon. Bake about 35 min at 350 degrees. Top with grated cheese and bake another 10 min.
