The Feast of Saint James and Scallops

Today is the Feast of Saint James, also known as Saint James the Greater. He was the son of Zebedee and brother to Saint John the Evangelist. Jesus often referred to them as the “Sons of Thunder” due in part to their horrible tempers, and their adamant defense of Christ. The story goes that there were some Samaritans that would not welcome Christ into their village. The brothers wanted to burn those people with fire from heaven. .

Christ disapproved and said that he was there to give life not take it away. It is believed this was the way Jesus wanted to teach them to resist the temptation of “getting even”, which is a great lesson to learn

Saint James was the first Apostle to die for Christ. He was beheaded by King Herod in Jerusalem for his faith.

The legend goes that after he was killed, his body was put in a small boat and set afloat on the sea. It is believed that the Angels from heaven guided that boat to Spain. When they discovered his body they found it was covered with Scallops. Perhaps that is why the emblem of Saint James is the Scallop Shell.

So in honor of St James the Greater, I made Cedar Planked Bacon wrapped Scallops.

Cedar Planked Bacon Wrapped Scallops

Ingredients:

1 Cedar Plank

Directions:

Season the Scallops with the Old Bay Seasoning. Wrap the scallops into the bacon Preheat your grill to medium. Place the scallops on the Cedar Plank. Cook the Scallops for about 20 minutes. Turn the Scallops and cook another 10 minutes. Serve immediately.
