Va Bien Con: peas & mushrooms

Ingredientes

  • 1 lb. Sea Scallops, rinsed and patted dry
  • 4 slices of bacon
  • 5-6 slices mozzarella cheese, sliced thin
  • 1 Tablespoon garlic, minced
  • 1 1/2 Tablespoon flavored breadcrumbs
  • 1 Tablesoon lemon juice
  • salt
  • olive oil
  • parsley
  • fresh basil (optional)

Direcciones

  1. Pre-heat oven to 400 degrees
  2. Put bacon in a skillet or microwave and cook thru but not crisp.
  3. Snip into pieces & set aside
  4. Drizzle olive oil in a baking dish.
  5. Place scallops in baking dish
  6. Season scallops with garlic, salt & parsley
  7. Toss to coat with oil
  8. Top with cooked bacon
  9. Sprinkle with breadcrumbs
  10. Sprinkle with lemon juice
  11. Top with mozzarella
  12. Scatter fresh basil on top, optional
  13. Drizzle with olive oil
  14. Bake in oven for 25 minutes.
  15. serve with peas & mushrooms and a side of saffron rice
