- Saute scallops in butter in a large frying pan 3 min or possibly till tender. Remove scallops from frying pan, reserving drippings. Saute mushrooms, onion, and garlic 3 to 5 min; remove vegetables, reserving drippings. Add in wine, juices, and seasonings to frying pan. Bring to a boil, and cook 8 min. Stir in scallops and vegetables; cook till thoroughly heated. Serve over hot vermicelli, and garnish, if you like. Yield: 3 to 4 servings.
