Ingredientes

  • 3 T butter
  • 1 pound fresh sea scallops or possibly frzn scallops, thawed
  • 1 garlic clove, chopped
  • 2 tomatoes, peeled and minced
  • 3 T minced fresh basil, or possibly 1 T dry
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly grnd black pepper
  • 3 scallions, cut in matchstick thin slices

Direcciones

  1. In large frying pan over medium high heat, heat 2 tbsp butter. Pat scallops dry on paper towels. Cook scallops in hot butter till opaque and golden brown. Remove scallops to platter; keep warm. Add in remaining 1 tbsp butter to frying pan. Add in garlic. Cook 1 minute. Add in tomatoes, basil, salt, and pepper. Cook till tomatoes render their juices, about 3 to 5 min. Return scallops to frying pan; add in scallions; heat thoroughly. Makes 5 servings. Total preparation time: 15 min.
