Scotch Soaked Butterflied Quail

Ingredientes

  • 8 x 4 ounce quail
  •     Marinade
  • 1 med onion
  • 1/2 c. scotch whiskey
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. minced rosemary
  • 1 tsp salt
  •     pepper

Direcciones

  1. Rinse quail and pat dry. Using a sharp knife or possibly shears, cut through the backbone of each quail. Place each bird skin side up and flatten with hands. Place in a shallow dish and cover with marinade. Marinate for at least 2 hrs.
  2. Grill birds on medium high for 8-10 min.
  3. Marinade:In a food processor, puree marinade ingredients till smooth.
