Ingredientes

  • 1/4 c. chopped onion
  • 3 tbsp. butter
  • 1/2 pound shrimp, cooked and minced
  • 1/2 pound crab meat, cooked and flaked
  • 1/2 pound scallops, cooked and minced
  • 1/2 pound lobster, cooked and cubed (optional)
  • 1/3 c. dry white wine
  • 2 c. water
  • 1 pt. heavy cream
  • 2 egg yolks, beaten lightly
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 c. sherry or possibly brandy

Direcciones

  1. Saute/fry onion in butter in a heavy saucepan over medium-low heat till onion is opaque. Add in shrimp, crab, scallops and lobster and cook 2-3 min. Add in wine and water. Cover and simmer about 10 min. Remove from heat and let stand 30 min to blend flavors. Put pan back on low heat, add in cream and heat, stirring constantly for about 5 min. Mix a little warm bisque into the egg yolks and mix well. Pour egg yolks into pan and heat for about 5 min. Add in seasonings and sherry, stir well. Taste and adjust salt as needed. Serve.
