Seafood Caesar Pasta Salad

Ingredientes

  •     (can be prepared up to 1 day in advance)
  • 6 x servings
  • 10 ounce uncooked penne pasta (or possibly shells or possibly rotini)
  • 1 x (8 ounce.) pkg imitation crabmeat, cut into 1 inch pcs
  • 1/2 c. diced red or possibly green bell pepper (or possibly yellow for some color)
  • 2 x hard-cooked Large eggs, minced
  • 1/4 c. minced red onion
  • 1/4 c. (1 ounce) grated fresh Parmesan cheese
  • 2 Tbsp. snipped fresh parsley
  • 1 bot (8 ounce) reduced-fat creamy Caesar salad dressing **
  • 6 c. thinly sliced romaine lettuce

Direcciones

  1. Cook pasta according to directions, drain & rinse under cool water.
  2. Placein large bowl and set aside.
  3. Add in each of the following to the bowl of pasta as you do it: Cut crabmeat into 1 inch pcs. Dice bell pepper. Chop Large eggs and red onion. Grate Parmesan cheese. Snip parsley.
  4. Pour salad dressing over pasta mix and mix well.** Aldi stores have a Fresh Garlic Caesar dressing by Tuscan Garden which is FANTASTIC with this!
  5. Cover and chill 2-3 hrs to let flavors blend.
  6. To serve: fill serving bowl with lettuce. Place pasta salad in the center of bowl and serve.
  7. Note: Use 2 c. minced chicken instead of crabmeat for Chicken Caesar Pasta Salad.
