Ingredientes

  • 1/2 cup butter
  • 7 lbs Italian sausage
  • 7 lb pepper, green- wash, de-seed
  • 6 lbs Spanish onion- peel,dice
  • 6 lbs celery- wash, large dice
  • 1/2 cup garlic, fresh- mince
  • 1/4 cup Old Bay seasoning
  • kosher salt to taste
  • ground black pepper to taste
  • 1 gal diced tomatoes (#10cn)
  • 7 lbs shrimp, medium
  • 4 lbs fish fillets- medium diced
  • 5 bay leaves
  • garnish- green onions, slice thin
  • hot sauce

Direcciones

  1. Saute sausage in butter in tilt grill for about 6 minutes then add bell pepper, onion, celery, and garlic, and seasoning, salt and black pepper.
  2. Saute for about 8 minutes, or until the natural sugars in the vegetables have browned and caramelized.
  3. Add the tomatoes, shrimp, fish, and bay leaf, and stir.
  4. Bring to a boil, then reduce to a simmer. Simmer for about 15 minutes then fold in oysters. Garnish with sliced green onions.
