Seafood Marinara Sandwich Summer and seafood go hand in hand here in Newfoundland. Local seafood is bountiful during the summer months and I love using as much of it  as I can in many different and delicious ways. Thi But it is summer after all, and simple, quick & easy meals are what’s needed most. That’s where this amazing seafood sandwich idea comes in. Think of it as an Italian Style Seafood Sloppy Joe!  This recipe can be adapted to whatever seafood is in season from diced lobster, shrimp, small scallops or even chopped pieces of grilled fish like halibut. I chose mussels for this sandwich because they are delicious, have plenty of great seafood flavour and are relatively inexpensive compared to many other seafood options. This makes them perfect for feeding larger groups at summer get-togethers. Fresh mussels If you have never steamed mussels before, don’t be intimidated. They are practically foolproof and could not be easier to cook. Discard any mussels thad do not close when pinched together before they cook, and discard any that do not open after they cook. Other than those two tips, just steam them in about an inch and a half of water in a covered saucepan, drain and they are done! It has to be one of the easiest seafoods to prepare ever. Parsons Ingredients 4 D’Italiano® Herb & Garlic Hamburger Buns 4 pounds fresh mussels in the shell 1 1/2 cups marinara sauce ( homemade, or good quality jarred sauce) 2 tbsp fresh chopped basil grated parmesan cheese Instructions Steam the mussels for 7 minutes in shallow boiling water in a covered saucepan.. Meanwhile heat the marinara sauce to a slow simmer in a small saucepan. Drain the water from the mussels and remove them from the shells. Discard any that do not open. Simmer the mussels in the marinara sauce or an additional 5 minutes. Serve on toasted D’Italiano® Herb & Garlic Hamburger Bunswith a little grated parmesan cheese on top.
