Ingredientes

  • 1/2 x recipe Corn Tortillas see * Note
  • 6 x Green-leaf lettuce leaves washed and halved
  • 2 lb Cooked lobster, crabmeat, shrimp,
  •     or possibly salmon (preferably poached)
  • 1 1/2 c. Citrus Cucumber Relish see * Note
  • 1/2 x Avocado, peeled seeded and mashed
  • 1 c. Sweet peas blanched
  • 1/2 bn Red radishes, washed trimmed, sliced thin
  • 1/2 bn Cilantro, leaves only roughly minced
  • 2 x Limes halved
  • 1/4 c. Extra-virgin extra virgin olive oil

Direcciones

  1. Toast 12 small tortillas. Lay tortillas out on counter. Line each tortilla with a piece of lettuce and spread the fish on top. Cover with 2 Tbsp. of cucumber relish, a dab of avocado, a Tbsp. of sweet peas, a few slices of radish and a healthy pinch of cilantro. Finish each with a squeeze of lime and a tsp. of extra virgin olive oil. Serve immediately.
