Receta Seitan and Mushroom Stir-Fry
Seitan is a great substitute for meat. If you're looking for a "Meatless Monday" meal or if you're a vegetarian or vegan, this dish is sure to please.

- Cut the seitan into strips or medalions.
- Heat 1 Tbsp. of oil in a large skillet or wok.
- Add onions, garlic and bell pepper and stir-fry about 2 to 3 minutes on medium high heat. Remove from skillet and set aside.
- Add mushrooms, water chestnuts and snow peas. Stir-fry for 4 to 5 minutes. Remove and set aside.
- Add the remaining oil. Add the seitan and stir-fry for about 2 to 3 minutes.
- Add the soy sauce mixture and cook until heated through (about 3 to 5 minutes).
- Return veggies to the skillet. Toss gently with the seitan and allow to cook, covered, for another 2 to 4 minutes or until heated through.
- Serve immediately over brown rice.
