For the third week of Blogging Marathon, it is Semiya Upma. A healthy evening tiffin option after school. You can also have this as light supper. Vermicelli filled with peas, carrots or an veggies of your choice. Enjoy this light meal either for breakfast or as a evening snack. Thats the speciality of South Indian Upma's. It serves both ways.

Instructions

Heat oil in a Kadai | pan. Once it is hot, add the mustard seeds and let it splutter. Then add the green chillies, curry leaves and ginger; give a quick fry.

Then add the cashews and channa dal. Once they become golden brown, add the onions. Stir fry until it becomes translucent and turns pink.

Add the veggies and saute them for a minute.

Then add water and salt; bring it to a boil. Check for salt. The water should be slightly salty. (2) Once it starts boiling, add the semiya and stir well.

Cover and cook for about 10 minutes. Keep the flame on medium and stir once in a while to avoid it sticking to the bottom of the pan.

Remove the lid and check if the veggies and the semiya are cooked. If it is done, add the coriander leaves and turn off the flame.

Serve it warm with chutney or as such for evening tiffin or for breakfast.

Notes

In grocers we get two types of Semiya, roasted and non-roasted. You can either of these and if you have non roasted, roast it in a pan until it turns slightly golden brown and then add in the water. I have roasted semiya which is golden brown in clour.

When making upma, always add salt to the water and check immediately. When you add salt in the end, it will not get mixed properly. The water should be slightly spicy and salty when you taste. When you add the smeiya and veggies, the amount of salt absorbed will be right.

You can also skip veggies and serve it plain. But addition of veggies makes it more healthier.
