Receta Sephardic Zucchini Pie
very simple main dish with farmers cheese.

- soak matzos in warm water until soft. Drain and squeeze dry.
- Peel and coursely grate zucchini into large bowl. In a separate bowl, lightly beat eggs with salt.(I would add cinnamon and dash nutmeg to this, although it is not in the recipe.) Add matzos, cheese and 1 Tblsp. of oil. Mix well. Combine egg mixture with grated zucchini; mix thoroughly. Pour the mixture into a greased 2 qt. baking dish. Bake 350 degrees in preheated oven uncovered for 1 1/2 hours or until golden brown.
