Sesame Chicken & Couscous ~ Quick & Easier Than Take Out! Have dinner on the table in less than 30 minutes!

How are those New Years resolutions going for all of you? Or maybe you just boycott the whole thing all together! I, of course, made the resolution to eat healthier and lose the rest of this baby weight. So far that baby weight is not disappearing in the new year. I’m trying to make a conscious effort to eat healthier, but obviously if the weight isn’t coming off I’m not being very successful at this! I’m not going on some cray cray diet and being all like I’m going to only drink juice or anything. I’m just trying to make smarter choices so I can make this a lifestyle not a fad. Now if only I was good at this and the weight fell off. Also, those who say that weight falls off if you breastfeed is wrong oh so wrong. Why can’t I be one of those lucky women?!

In my mission to make smarter choices I started with this amazing Skinny Pizza Mac N’ Cheese that Taylor shared the other day. I kept watching my hubs face to see if he noticed that it was made with “better for you” ingredients. Nope. He inhaled it. Then I asked if he liked it and of course he said yes and asked the name of it. Then he proceeded to ask if it would make him skinny. I had to laugh and tell him no, if he ate 6 servings it wasn’t doing much good! Maybe that’s my problem in this equation? I still am eating to much even if it’s better for me stuff! We are trying out this yummy Light Crock Pot Fiesta Chicken that Danielle shared with us the other day for supper tonight!

This Sesame Chicken and Couscous is another great dish if you are trying to eat a bit smarter!

Sesame Chicken & Couscous

Ingredients

Instructions

Bring water to boil in a saucepan. Stir in couscous. Remove couscous from heat, cover and let stand 5-10 minutes or until water is absorbed, fluff with fork.

Meanwhile in non stick skillet, heat oil over medium heat. Add coleslaw mix and cook and stir for 3-4 minutes or until mixture is tender. Add green onions, 2 Tbsp dressing and couscous to skillet and heat through. Removed mixture from pan and keep warm.

In same skillet add chicken and remaining dressing; cook and stir over medium heat until chicken is heated through. Serve chicken over couscous and top with peanuts.
