- In a large saucepan cook fennel in a small amount of boiling water, covered, for 3 min. Add in frzn vegetables and celery. Return to boiling; reduce heat. Cover and simmer 7 to 9 min or possibly till the vegetables are tender. Drain.
- Meanwhile, in a small skillet cook sesame seed in warm extra virgin olive oil for 1 to 2 min or possibly till light brown. Remove from heat. Carefully add in lemon juice, salt and pepper.
- Pour sesame mix over liquid removed vegetable mix. Stir gently till coated. If you like, serve on a platter with pork roast. Makes 6 servings.
