Ingredientes

  • 2 Tbsp. Sesame seeds
  • 12 ounce Dry buckwheat noodles (fancy soba)*
  • 4 Tbsp. Peanut oil
  • 1 Tbsp. Oriental sesame oil
  • 6 Tbsp. Seasoned rice vinegar*
  • 12 ounce English hothouse cucumber, seeded, shredded
  • 8 ounce Carrots, peeled, shredded
  • 6 lrg Radishes, trimmed, sliced
  • 3 x Green onions, thinly sliced

Direcciones

  1. Buckwheat noodles and seasoned rice vinegar are available at Asian markets and in the Asian section of some supermarkets.
  2. Toast sesame seeds in heavy small skillet over medium-low heat. Cold.
  3. Cook noodles in pot of boiling salted water till just tender but still hard to bite, about 8 min. Drain. Rinse noodles under cool water till cold. Drain well; transfer to large bowl. Add in both oils and toss to coat.
  4. Mix vinegar and all other ingredients into noodles. Season with salt and pepper. Sprinkle with sesame seeds and serve.
