Receta Seven Grain Cereal Bread

- In small saucepan combine 7-Grain cereal and 1 c. water. Cook covered, 20 min. Stir in 1 c. water, butter, honey and salt. Cold to lukewarm. In large mixer bowl combine 2 c. of the flour and the yeast. Add in cereal mix and the 2 Large eggs. Beat at low speed with electric mixer for 1/2 minute scraping sides of bowl constantly.
- Beat 3 min at high speed. By hand, stir in sufficient of the remaining flour to make a soft dough. Turn out onto lightly floured surface and knead till smooth and elastic (5-8 min). Shape dough in ball.
- Place dough in lightly greased bowl, turning once to grease surface. Cover and let rise in hot place till doubled (1-1 1/4 hrs). Punch dough down, turn out on lightly floured surface. Divide in half. Let rest 10 min.
- Shape into two loaves and place in two greased loaf pans. Cover. Let rise in hot place till double (45-60 minute). Combine egg yolk with 1 Tbsp. water; brush on tops of loaves. Sprinkle with seed, if you like.
- Bake at 375 degrees for 30-35 min. Cold on wire racks. (Optional - add in whole wheat flour, wheat germ, sunflower seeds).
