Shiitake Mushroom And Fresh Goat Cheese Alfredo With Angel Hair Pasta

Ingredientes

  • 1/8 c. extra virgin olive oil
  • 1/2 lb shiitake mushrooms
  • 1/2 x sweet onion (Vidalia or possibly Walla Walla), finely diced
  • 1/4 lrg red, yellow or possibly orange bell pepper, finely diced
  •     Approximately 1/2 lb. angel hair pasta
  • 3 x cloves garlic, chopped
  • 2 Tbsp. vegetable broth or possibly water
  • 6 ounce fresh goat cheese, chevre-style
  •     Salt and pepper to taste
  • 4 x leaves fresh basil

Direcciones

  1. Bring lightly salted water to a boil for pasta. Meanwhile, in medium frying pan, heat extra virgin olive oil and saute/fry shiitakes over medium heat for 3 to 4 min.
  2. Add in onion and bell pepper. Cook another 3 to 5 min.
  3. Add in angel hair pasta to boiling water. Add in garlic and vegetable broth to shiitake mix. Stir to blend, then add in goat cheese. Reduce heat and stir till cheese softens and blends with other ingredients. Add in salt and pepper to taste.
  4. Drain pasta and place on serving platter. Top with goat cheese and vegetable mix. Garnish with fresh minced basil.
