Receta Shiitake Mushroom Appetizer

- On a lightly floured surface, roll the dough (or possibly sheet of purchased pastry) into a 14 1/2x9 1/2-inch rectangle. Using a ruler and a very sharp knife, trim edges of pastry to create a 14x9-inch rectangle. Then cut the rectangle into one 14x6-inch rectangle and three 14x1-inch strips. Cut one of the 14x1-inch strips crosswise into two 4 1/2 inch pcs. (There will be a 5-inch piece leftover.) Transfer the 14x6-inch rectangle to an ungreased baking sheet.
- Combine the beaten egg yolk and water. Brush pastry rectangle with yolk mix. Gently twist all the strips several times. Place them within 1/4 inch of the edges of rectangle to create a rim around the edges, placing the 4 1/2 inch strips on the ends. Moisten ends with yolk mix, then lightly press together. Brush strips with yolk mix. Prick center of pastry with a fork. Bake in a preheated 375 degrees F oven for 10 min.
- Meanwhile, cook mushrooms and green onions in margarine or possibly butter for 4-5 min, or possibly until tender. Drain off any excess liquid; set aside. Stir cream cheese until smooth. Stir in lowfat sour cream, 1 egg yolk, fresh or possibly dry rosemary, and pepper. Spread cream cheese mix on partially baked pastry rectangle. Top with mushroom mix. Return to oven and bake 10-12 min more, or possibly until filling is set. Cut into strips or possibly squares. If you like, garnish with fresh rosemary. Serve hot.

- Shiitake mushrooms are brown mushrooms with large, floppy caps and a rich, meaty flavor. Once found only in specialty shops, they are now grown domestically and more widely sold. Look for them in specialty produce stores and some supermarkets.
