These easy Shortbread Cookies are buttery, low carb and spectacular!

Preheat oven to 350. Spray baking sheet with nonstick cooking spray. In a medium mixing bowl, cream together butter, extract and sweetener. Add flour to mixture and continue to mix until dough forms. Roll dough out onto lightly floured (almond or coconut) surface until about ? inch thick. Cut into rounds and place on prepared baking sheet. Bake for 10-12 minutes or until light golden brown. Allow to cool on pan for at least 5 minutes. 3.2.2925

The excitement of it all.

I don’t know how to tell you this. And it’s true. It’s really true.

I have been cooking and baking since I was about 14 years old. To put it mildly, it feels like a lifetime. But here is the part that is unbelievable.

I have a birthday coming up (not so unbelievable). It’s three days after Christmas. Pretty anti-climatic I would say. For years I always felt like I was getting the sticky end of the lollipop.

Now the thing is, this year I treated myself to something I always wanted. My very first electric stand mixer. Yup! All these years and I used a hand mixer. You would have thought I could build up some biceps using a hand mixer. But I didn’t. I no longer have to yearn for that fancy ass mixer that only appeared in my dreams. Well, maybe in catalogs, and stores, but never in my home.

I ordered it on-line. The day it arrived I baked.

I baked these shortbread cookies. And yes, their spectacular. The mixer and the cookies.

I am in awe of this device that can mix up batter in a split second. But even better, I don’t have to hold the mixer anymore.

This mixer, aptly named “sugar”, is displayed on my counter and is my newest precious toy.

I hereby announce “let the mixing begin”. I am vowing no baking for the month of January, but that doesn’t mean Sugar can’t be used for something savory.
